Ice cream
Ice cream combines Milk, Sugar, and fat. Mainstream epidemiology has reported inverse associations between moderate ice cream intake and cardiometabolic endpoints in some cohorts.[1]
Ray Peat did not write a dedicated ice cream article. His sleep and diet notes treat milk with sugar, salt, and Gelatin before bed as practical supports, a pattern ice cream approximates when made from milk, sugar, and minimal additives.[2] See Sleep, Honey, Roadmap/02 - Diet.

Peat's glycemia writing treats sucrose and honey as metabolic fuels when thyroid and protein context are adequate, not as isolated high-glycemic villains.[4] Simple flavors (milk, cream, sugar, egg) match that framing better than industrial additive-heavy products.
Research notes
[edit]Polyphenol-enriched ice cream raised endothelial function markers in a small human crossover trial.[5]
A pooled analysis of the Nurses' Health Study, Nurses' Health Study II, and Health Professionals Follow-Up Study (Harvard T.H. Chan School of Public Health) found each daily serving of ice cream was associated with 22% lower type 2 diabetes risk (HR 0.78, 95% CI 0.71-0.86). The association weakened to 11% (HR 0.89, 95% CI 0.83-0.96) once the researchers censored dietary updates after a hypertension or high cholesterol diagnosis, since sick participants tend to change their diet, which the authors flag as a likely source of reverse causation rather than a genuine protective effect.[6]
Against that, a 16-year Korean cohort found ice cream had the highest saturated fat content per serving of any dairy food studied, with higher intake tracking higher cardio-cerebrovascular disease incidence.[7] Peat would still pair any sugar food with adequate protein, minerals, and thyroid context, rather than reading either study as a green light on its own.
